Decadent Homemade Pizza

A few weeks ago, my husband and I went to Springfield, Missouri to hang out with my bff Jamie and her family.  They took us to the farmer’s market where we scored some A-MAZ-ING, fully baked pizza crusts, delicious goat cheese and gorgeous mushrooms.  Sounds like the makings for some decadent pizzas from heaven.  Usually I make my own pizza crusts, but these were delightfully made with love by some artisan crust makers.

I bought three different crusts with assorted herbs and cheeses baked in.  This was the first one I used. When I make homemade crust, I use the Pioneer Woman’s Favorite Pizza Crust Recipe.  I make it exactly as she directs except I use freshly milled whole wheat flour.

For the first pizza, I cooked two pieces of chopped bacon in a skillet and set them on a paper towel to drain.  I sliced up my gorgeous Portobello and oyster mushrooms with some onions and sauted them to top my pizza.

I made a garlic butter sauce for this pizza by melting a tablespoon of butter and adding a half a teaspoon of Italian seasoning and a grated clove of garlic.  I mixed it together and spread it on the crust with a pastry brush.

I loaded that pizza up with the mushrooms and sprinkled on some of the tasty goat cheese I scored and a little mozzarella.  Then I topped it with the sauted onions and the bacon bits I made.  Last, I added a bit of freshly grated parmesean cheese to make it the most decadent it could be.

Decadent Homeade Pizza

This pizza was amazing.  The best and most decadent bite of pizza I have ever tasted in my life, hands down.  Talk about a decadent homemade pizza!

 

A couple days later, homemade pizza was on the daycare menu so I made two more creations with the other crusts I bought.  One was made with the same garlic butter sauce and the other sauce was made by taking my Easy Roasted Tomato Sauce and adding the same amounts of Italian seasoning and grated garlic.  I used about 1/3 cup of the tomato sauce on this pizza.  My recipe for Homemade Pesto Sauce without Nuts would also make a magnificent sauce for a pizza.  Yum!

After adding the sauce, I sprinkled the pizza with some dried greens that I made earlier in the summer to boost the nutritional content of the pizza.  They look like herbs and they taste great, even to kids that would otherwise not eat greens.  I’ve been sprinkling them in a lot of dishes to make them even healthier.  Next I sprinkled the pizzas with shredded mozzarella cheese.

I topped the tomato sauce pizza with pepperoni and the garlic butter sauce pizza with sauted onions and bacon bits again.  My two favorite pizza toppings.  I also used the last of the goat cheese on the bacon onion pizza.

I baked the pizzas at 400 degrees for about 15 minutes until the cheese was melted and slightly golden.

Talk about some decadent pizza.  The kids devoured ALL of this scrumptious pizza.

Homemade Pesto Sauce (without nuts!)

I am working on harvesting some of our garden surplus like the herbs that we haven’t used up and we had a ton of basil. I harvested two pounds of basil leaves from the walkways in the garden. Man did I smell good! What to do with all this basil? PESTO!

I am allergic to nuts so I wanted to come up with a pesto I could eat too, so I decided to roast up some sunflower seeds to use in place of the pine nuts.  I used 1/4 a cup of seeds and toasted them lightly in a skillet.

Toss the toasted seeds in the blender with 2 cups of basil leaves and we also added a couple of dried thai peppers for some kick.

Blend until smooth.

Blend until smooth adding olive oil until sauce will blend. Approximately 1/4-1/2 cup.

We used some of the pesto as a topping for some cooked pasta and froze the rest in pint sized jars to use later.  It was delicious!
