Honey garlic lemon chicken
There’s nothing better than honey, garlic, and lemon together. I love cooking with lemon. Lemon chicken is my very favorite! These honey garlic lemon chicken thighs are easy to toss in the crockpot, can be assembled ahead in a freezer bag for a dump meal, can be cooked in big batches and used leftover or frozen again for a quick dinner in minutes. They are so versatile and go with any veg for a side.

And this lemon and butter make a wonderful sauce in the crock pot as the chicken cooks that you can spoon over it as is or thicken it up and make a gravy. Either way, it’s so good!
You don’t have to sear the chicken before you toss it in the crock pot if you’re crunched for time. But if you do, it adds another layer of flavor and browns up the chicken a little. It’s just a bonus, but not a necessity!

Slow Cooker Honey Garlic Lemon Chicken Thighs
Ingredients
- 6 Boneless skinless chicken thighs
- Salt and pepper to taste
- ½ tsp. Paprika
- ½ tsp. Oregano
- ½ tsp. Sage
- 3 Tbsp. Butter
- 1/4 cup raw honey
- 1 small onion quartered
- 3 cloves minced garlic
- ½ cup chicken broth
- 1 lemon cut into slices
Instructions
- Add the butter to a skillet over medium high heat.
- Season the chicken on both sides with the paprika, oregano, sage, and salt and pepper to taste.
- Sear the chicken evenly on both sides to brown it.
- Place the onion, minced garlic, honey, and chicken broth in the bottom of the crockpot.
- Add the chicken and butter from the skillet to the crockpot.
- Top the chicken with the sliced lemon.
- Cook on high for 4 hours.
Leftover chicken thighs
To use the leftover thighs, just store them in an air-tight container in the refrigerator for up to 4 days. To reheat, microwave until warm or reheat them in the oven. You can even use a skillet on the stovetop to reheat them.
To freeze leftover chicken thighs, place them in an air-tight container and freeze for up to 3 months. Thaw in the refrigerator overnight and reheat as noted above.
