What is a good meal without meat?
At our house, we love to make a big sheet pan of roasted vegetables and enjoy that. If you choose some starchy vegetables like butternut squash or sweet potatoes and pair them with leafy greens like broccoli or whatever you like, you’ll be amazed at how good you feel and how full you stay. Even without meat or grains. We like to have this at least once a week.
There are other great choices for healthy meatless meals such as soups, salads, casseroles, sandwiches, and much more. I love those budda bowls too. Just toss in a bit of rice for the base and then top it with stir-fried, raw, or roasted veggies for a wonderful meal.
There are many benefits to eating meatless meals. You don’t even have to do it all the time. Just a few meals a week skipping the meat will leave you with more energy, more money, and less weight.
