Balsamic Chopped Salad Recipe

There's nothing quite as yummy and fresh as balsamic chopped salad. I love this recipe. It tastes like summertime! Chopped salads are my favorite because they are fresh, tasty and easy to eat.

I’m on my own tonight and wanted something tasty to eat. I also wanted something that wasn’t too time-consuming to make and that was fresh and healthy.  I LOVE chopped salad and I LOVE marinated salads. I looked around to see what I had to choose from and this is what I came up with. 

Balsamic Chopped Salad Recipe

I’m eating it right now and it’s super delicious!  Something about the combination of avocados and bacon is magical.  I love balsamic on just about anything, and the little bit of microgreens I had left were just the touch needed to make it taste super fresh and delish!

First I cubed up a cucumber, put in some fresh mozzarella balls, and diced up some purple onion in a tiny dice.

Next, I put a sprinkle of balsamic and a splash of olive oil on the cucumbers and let them sit for a bit while I chopped up the other ingredients.

I chopped up about a cup of tasty cherry tomatoes and tossed those in.

Then I cut up two tiny avocados and threw them in.

Lastly, I cut the remaining microgreens I had growing in my kitchen window and tossed those in the bowl with some salt and pepper.  I also had a slice of bacon I chopped up and cooked.  I drained that and added it as well.

After stirring it all together, I got down to business.  This kid was so excited as I was making it, that he gave me a play by play of all the things I was adding that he loves.  (All of it by the way).  He sampled each ingredient as I put it in and when the final product was done, he HAD to get a taste of it, here’s the verdict:

I love that my kids love healthy food.  I love to share it with them and let them try new things. 

This salad was honestly, one of the best things I ever ate.  Success.

Balsamic Chopped Salad
A chopped fresh salad with balsamic vinegar dressing

Ingredients
  • 1/4 small red onion chopped
  • 1 cup cherry tomatoes chopped
  • 1/2 cup fresh mozzarella balls
  • 1 slice of chopped and cooked bacon
  • 1 diced cucumber
  • 2 small or 1 large diced avocado
  • 2 T. Balsamic vinegar
  • 1 tsp. olive oil
  • salt and pepper to taste
  • sprinkle of microgreens
Instructions
  1. Chop all the vegetables.
  2. Add crumbled bacon and mozzarella balls
  3. Add vinegar and oil
  4. Add salt and pepper
  5. Sprinkle on microgreens

  2. This looks so good, and just like Andrea said, you had me at avocado! The only thing I would probably leave out these days is the bacon (but only because I’ve cut meat for a fast this month) I’m definitely pinning this.
