This salad is full of super nutritious ingredients like crisp cucumbers, vibrant tomatoes and yummy, creamy avocados. It also has some tasty surprises like tiny mozzarella balls for a burst of fun and flavor. It’s super easy to chop everything up and mix it together for a party or weeknight side that you’ll keep coming back for.

Zesty, spicy, super fresh salad for any dinner or get together.

Ingredients
  • 2 avocados
  • 1 cucumber, diced
  • 1 small red onion
  • 1 pkg cherry tomatoes
  • 1 pkg baby mozzarella balls
  • 1 jalapeno, finely diced
  • 2 T. red wine vinegar
  • 2 T. olive oil
  • 2 limes, juiced
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp dill (you could use cilantro for a more Mexican flavor)
Instructions
  1. Cut onion, avocados, tomatoes, jalapeno and cucumber into small dices. Toss in a bowl. Add mozzarella balls, olive oil, vinegar, lime juice, salt, pepper and dill. Mix lightly so you don't smash the avocados. Let mixture set for at least one hour before serving.

  3. I love avocados too, but don’t cook/make salads with them enough! This looks wonderful, love the addition of vinegar and limes for some acidity!
